Mentaiko (明太子) is made from whole roe sacs of cod, which are cured with salt and marinated in various seasonings and spices.
Best served with pasta or rice and ready in less than one minute for a perfect umami flavour, enjoy with a glass of The Eav's Junmai-Ginjo (而富純米吟釀), Tsubomi white wine or Shichiken Yama-No-Kasumi Cloudy Sparkling Sake (七賢山之霞有氣濁酒)
