The Eav's Cod Mentaiko Sauce (鱈魚明太子醬)
Mentaiko (明太子) is made from whole roe sacs of cod, which are cured with salt and marinated in various seasonings and spices.
Best served with pasta or rice and ready in less than one minute for a perfect umami flavour.
The Eav's Monkfish Liver Mousse (鮟鱇魚肝醬)
Known as the foie gras of the sea, the monkfish liver is considered a delicacy in Japan.
A rich, creamy and silky texture, to be enjoyed on crackers or toasted brioche.
Both are best paired with a glass of The Eav's Junmai-Ginjo (而富純米吟釀), Tsubomi white wine or Shichiken Yama-No-Kasumi Cloudy Sparkling Sake (七賢山之霞有氣濁酒)
